In my experience, most office workers will sit for hours and will only rise to go to the restroom, eat, or smoke. They won't even roll their chair back enough to stand for awhile. I have seen people come in at 8:00 and not move from their desks until lunchtime, and sometimes not even then.
This brings to mind a conference call that I had to suffer through a few weeks ago. The conference call was scheduled for 90 minutes but lasted for 3 1/2 hours. Everyone was seated the entire time and the only reason anyone ever got up was to make a quick dash to the restroom. The common sense thing would have been to have a 10-15 minute break (or two) sometime during that conference call so every person would be free to stretch his or her legs for an extended time without missing anything.
